R Miguel Coffee Represents the Pinnacle of the World's Coffe Production
Most coffees are produced in large lots of 30,000 to 40,000 lbs and in varying levels of quality. R Miguel Coffee produces on a micro-scale with the highest attention to detail throughout harvesting and processing. Each R Miguel Coffee begins life as optimally ripened coffee cherries that are hand-harvested by the highest-skilled pickers on the respective farms. Our coffees are always harvested from low-yielding heirloom varietals such as Geisha, Bourbon, and Typica; these varietals have the genetic potential to produce the most complex and complete coffees. The drying process and removal of the fruit is carried out by exotic methods and is flawlessly executed under careful supervision. After drying and milling, our coffees are meticulously hand-sorted until it is completely free of defects. As much effort is expended on our 50 to 200 pounds of coffee as is expended on 40,000 pounds. The result of the effort is reflected by the quality of our coffees and is congruent with our pursuit of producing coffees of unparalleled distinction.

“Nectar is in the style of the great naturals from Ethiopia like some Biloya and Balekara coffees. Produced under the watchful eye and consultation of Graciano Cruz of the Los Lajones farm in Boquete, Nectar compared to the Aurora is more exotic and full-bodied. The aroma is an intense mix of orange, peach, and berries. Nectar is the finest example of a natural process coffee I have seen from anywhere in the world.”

Coffees that earn the R Miguel name must be free of physical defects, taints in the cup, and exhibit the full sweet-flavor that can only come from coffee that was picked while perfectly ripe. In addition to our meticulous preparation process, all R Miguel Coffees have a sensory score of 94 points (out of 100) or higher. R Miguel samples hundreds of coffees each year and only 4 to 6 coffees will meet a sensory score of 94 points or higher.

Once a coffee that is worthy of being an R Miguel offering is produced, we then take the utmost care to have it delivered to us promptly and in pristine condition. Nearly all specialty coffee in the world is packaged in jute bags and shipped on ocean-going containers. This is hardly ideal for preserving quality and often coffees will arrive with their flavors tasting faded and distant as a result. Every R Miguel Coffee offering is vacuum-packaged at origin and air-freighted to us. The results of these extensive efforts are vibrant, complex, and luxurious coffees that can only be distinctly R Miguel.
